Lucca PDO extra virgin olive oil is obtained from the olive fruits of the Frantoio, Frantoiano or Frantoiana varieties present in the olive groves up to 90%, and Leccino up to 30%. Other minor varieties may contribute up to a maximum of 15%.

Production method Lucca DOP Extra virgin olive oil

The olives must be harvested directly from the plant, preferably by hand and without, however, considering the olives that have fallen to the ground. The harvest must be completed by 31 December of each year. The olives are transported to the mill in order to allow the perfect preservation of the fruit, taking care to keep them in rigid and ventilated containers, in cool and dry places until milling, which must take place within two days of harvesting. The malaxing phase can last no more than 50 minutes and must be carried out at a maximum temperature of 28 ° C.

Appearance and flavor Lucca DOP Extra virgin olive oil

Lucca PDO extra virgin olive oil is yellow in color with more or less intense green tones. The smell is light to medium olive fruity and the taste is essentially sweet, with a spicy or bitter sensation in relation to the degree of fruitiness.

Olive growing in the production area of ​​Lucca PDO extra virgin olive oil has ancient origins, documented as early as the eighth century. The importance of the olive oil business experienced a significant growth in the fourteenth and fifteenth centuries when, throughout Tuscany, measures were taken to promote and protect this type of crop. Over time, the marketing of oil has also developed and has managed to find space in the main industries of the sector.

The production area of ​​Lucca PDO extra virgin olive oil involves 20 municipalities in the province of Lucca, in the Tuscany region.

Production regulations - Lucca DOP

Article 1.

Denomination The protected designation of origin "Lucca" is reserved for extra virgin olive oil that meets the conditions and requirements established by Regulation (EEC) no. 2081/92 and indicated in this production specification. 

Article 2.
Production area The production

Art. 3. Variety of olives
The protected designation of origin "Lucca" is reserved for extra virgin olive oil obtained from olives produced in the area defined by art. 2 belonging to the following varieties:
1) Frantoio or Frantoiano or Frantoiana - up to 90%;
2) Leccino - up to 30%;
3) Other - up to 15%.

Article 4.
Characteristics of cultivation
The pedoclimaic and cultivation conditions in the olive groves intended for the production of oil with a protected designation of origin pursuant to art. 2 must be those specific to the production areas suitable for giving the olives and oil the traditional qualitative characteristics.
A) Cultivation techniques:
1) pruning: at least every two years in spring;
2) fertilizations: organic and mineral;
3) soil management: grassing: surface tillage of the soil: chemical weeding is allowed only in cultivation situations (terraces, excessive slopes) which preclude the use of machinery for periodic mowing, shredding or surface tillage of the soil. On said surfaces, treatments with contact herbicides are allowed in one or more applications, operating with microdoses on weeds in the first stages of development;
4) phytosanitary defense: definition of treatments, with particular regard to Bactrocera Oleae, with application of the guided control programs established by the consortium in the context of regional regulations.
B) Collection indications.
The olives must be harvested from the plant preferably with the "manual picking" method: olives collected on the ground must not be used in any node. The olive harvesting phase must in any case be completed by the deadline of 31 December of each year. Live harvested and processed after this date will not be suitable for the production of “Lucca” DOP oil.
The maximum production of olives per hectare, per production campaign of the olive groves intended for the production of the oil referred to in art. 2, must be the following: olives / Ha 70 for olive groves in specialized and intensive cultivation;
20 kg of olives per plant in other cases.
The maximum yield of olives in oil per production campaign of the olive groves in the register of protected designation of origin "Lucca" is defined annually by the competent control body, after consulting the protection consortium, and cannot in any case exceed 19.00%.
The transport of the olives must take place in a way suitable for the perfect conservation of the fruit.
The harvested olives must be stored until the milling phase in rigid and aerated containers (plastic boxes) in cool and ventilated rooms.
The olives must be pressed within 2 days of harvesting.

Article 5.
Oil-making procedures The oil-making
operations of the “Lucca” DOP must be carried out within the territories of the municipalities referred to in art. 2. Oil-making will take place with the traditional pressure method or in modern continuous or semi-continuous oil mills as long as they meet the operational validity characteristics recognized by the competent control body. The indications concerning the maximum time and the kneading temperature must be respected, respectively set at 50 minutes and 28 degrees centigrade. In the case of very dry olives, dilution water at a temperature not exceeding 20 degrees centigrade can be used.

Article 6.
Characteristics for consumption
The oils referred to in art. 1 when released for consumption, they must meet the following characteristics:
organoleptic characteristics:
yellow oil with more or less intense green tones;
light to medium olive fruitiness, basically sweet and with spicy and bitter sensations linked to the intensity of the fruitiness detected;
minimum score in the panel test: equal to or greater than 7.
Physico-chemical characteristics:
maximum acidity in 0.5% oleic acid;
number of peroxides max 12;
palmitic acid 9-14%;
palmitoleic acid 0.4-1.2%;
stearic acid 0.5-3%;
oleic acid> 72;
linoleic acid 5-9%;
linolenic acid <0.9%;
total polyphenols not less than 100 mg / liter;
total tocopherols not less than 90 mg / liter.
The chemical-physical and organoleptic tests must be carried out, according to the methods referred to in reg. EEC n. 2568/91 and subsequent amendments and additions.

Article 7.
Designation and presentation
The protected designation of origin referred to in art. 1 it is forbidden to add any additional mention other than that provided for by current legislation and this specification, including indications: type, taste, use, selected, chosen and similar, as well as indications that refer to geographical units other than those expressly provided for in this specification. However, the use of indications referring to companies, names, company names or private brands is permitted as long as they have no laudatory meaning, are not such as to mislead the consumer and are reported in half size compared to the font with which, on the label , the DOP is transcribed. The extra virgin olive oil with protected designation of origin, produced in the area referred to in art. 2, can be marketed in containers with bottles having a capacity not exceeding 5 liters. The containers and / or bottles containing the extra virgin olive oil, marked Dop or on the labels affixed to them, must be shown in clear and indelible characters the following indications:
a) the PDO under which the oil is offered for sale, followed immediately below by the wording "protected designation of origin";
b) the name and surname of the producer or company name and seat of the bottling plant;
c) the quantity of products actually contained in the container expressed in compliance with current methodological standards;
d) the words "oil bottled by the producer at origin" or "oil bottled in the area, of production" depending on whether the bottling is carried out by the producer or by third parties;
e) the oil year or year of production.
In addition, the graphic symbol relating to the image of the specific and univocal logotype to be used in inseparable combination with the protected designation of origin must appear. The graphic symbol is presented in the form of a circle with shaped irregular edges, like a real-size sealing wax stamp, total of 2 x 2 cm in Dark Green color (Pantone 364 cvc). Inside, in overprint, the first two concentric circles of 17.1 and 17 mm in diameter act as a frame, both brown (Pantone 161 cvc) inside which the words "extra virgin olive oil denomination of protected origin "on a light green background created by a 15% screening of the Pantone 363 cvc color, delimited by two concentric circles, always overprinted, with the respective diameter of 12 and 11.8 mm in brown (Pantone 161 cvc). Inside the last two circles, in a central position inside the drawing, is inserted the representation of an ancient oil press, printed in brown color (Pantone 161 cvc) bearing the writing "Lucca" on a light yellow background (Pantone 1205 cvc). Superimposed on all other colors, in imitation gold (Pantone 104 cvc) as the final print color, the image of the oil dripping from the press during pressing. As an option there is the replacement of the gold-like color (Pantone 104 cvc) with the application of gold powder to obtain the effect of a more striking gold, or the application of the same shape depicting the oil pouring made with foil hot gold, to obtain a metallic, shiny and brilliant effect. This mark is to be reproduced in the actual size of 2 x 2 cm to be subsequently applied to bottles or containers of the extra virgin olive oil with the protected designation of origin "Lucca" on paper suitable for application, with glue or adhesive support, or by reproduce, appropriately enlarged, for all other uses provided that in the ways and terms decided by the Authorities authorized by the same brand.
